Collection of 15 Cozy Vegan Fall Recipes

Something about Fall makes cooking even more exciting. The first thing I think of when we turn the corner from Summer to Fall is what I can chef up to ring in my favorite season.

Desserts, soul foods, whatever you are craving, here are some of my favorite fall-themed recipes, all 100% vegan! This post is packed with creative Fall foods, ranging from sweet treats to hearty, nutritious, simplistic savory courses.

Even if you’re not vegan, sampling vegan recipes can be a great way you can do more for the earth and the animals we share it with. Nothing cozier than cooking with no animal cruelty.

Breakfast:

Steel-cut oats are my go-to breakfast because they are full of protein, fiber, and iron; the nutrition powerhouses. They also are perfectly delectable with just about any topping, but this recipe has got to be one of my favorite ways to decorate my oats. The candied pears and warm brown sugar will wrap you in a much-needed food hug, fit for a chilly fall morning.

2. Savory Chickpea Pancakes with Tomates + Spinach

These savory crepe-like pancakes can be enjoyed for any meal of the day! They are a garden of nutrition and creativity. I recommend adding some Just Egg and possibly some thinly sliced mushrooms roasted until slightly crispy in olive oil!

A dessert, but healthy? It’s true. This treat feels like a dessert but is packed with Omega-3’s, protein, fiber, and iron, all thanks to the oats and chia seeds filling this apple spice parfait.

Cauliflower is uncanny to the meat you may be used to eating tacos with, not to mention loaded with nutrition. These tacos are smoky, mouth-watering, and will probably change your mind about vegetables. It wasn’t until I went vegan that I realized how versatile and creative vegetables really are. This recipe is solid proof of that.

6. Crispy Balsamic Brussels Sprouts

Okay, I may love brussels sprouts a little more than the average person, but trust me on this: they’re extremely underrated. And, they are such a classic Fall veggie. With only a few ingredients, this recipe is great for busier nights and goes perfectly as a side dish to some curry or rice.
